It is made by heating apple juice concentrate at high temperature, before the solution is filtered through resins to strip all colour, flavour and aroma.

Deionised apple juice is a natural sweetener, made by heating apple juice concentrate at high temperature and then filtering it. It has a high sugar content, but no taste at all – which means it can be added to all manner of food and drink products without any trace of apple flavour.

There’s increasing pressure on food and drink manufacturers to reduce the quantity of sugar that’s added to their products – or at least to use sugar from natural sources such as fruit. Crucially, using deonised apple juice as a sweetener means you can label the product with claims like 100% natural fruit sugars, rather than having to declare the inclusion of traditional sugar.
