It’s made by discarding the fruit’s outer peel, then processing the remaining flesh – resulting in a smooth, thin puree ideal for marmalades, jams and curds.

What is lemon dummy?
A lemon dummy is a puree that is made from the inside of the lemon, rather than the entire lemon (pulp and peel). Therefore, it is produced by pressing the pulp through a fine sieve, to create a flavoursome, aromatic puree with a strong citrussy flavour.

Is lemon dummy the same as lemon puree?
At Kiril Mischeff we stock two types of lemon/citrus fruit purees – dummy and comminute. Lemon dummy is a type of puree made by discarding the outer peel of the fruit, and pulping/pressing the remaining flesh through a fine sieve. On the other hand, comminute is made with the peel of the lemon, and the whole lemon is pulped and passed through the sieve. This gives a more bitter flavour thanks to the addition of the zest.
What is lemon dummy good for?
Thanks to its zesty, zingy flavour lemon dummy is a great addition to jams, marmalades, curds, squashes and cordials. These are all products that require a deep, intense lemon flavour. If you are looking for something more subtle for use in a juice drink or smoothie, you might be better suited to our lemon juice concentrate or NFC lemon juice.
