It’s available from Kiril Mischeff at between 9° and 11° Brix.
How is redcurrant puree made?
A largely unprocessed product, redcurrant puree is made simply by applying a gentle heat treatment to the fruit, then sieving the broken-down berries for a smooth and luxurious final product.
Such minimal processing ensures the puree maintains the nutritional benefits of the redcurrant, which is known for its healthy levels of vitamin C and fibre.
