What is rhubarb concentrate?
Rhubarb concentrate is rhubarb juice that has been heated to reduce the fruit’s water content. The result is a solution six times stronger than a juice, but also considerably smaller in volume – making it more convenient and cost-effective for food and drinks producers to transport.
Once the rhubarb concentrate reaches the commercial kitchen, it can be used in its strengthened state, or restored to regular juice strength by simply re-adding the water.
