How is Apricot Puree made?
We source our apricot purees from growers in Greece and Spain, countries with an ideal climate for growing sweet, juicy apricots.
Once harvested, the fruits are gently heated until they break down, before the reduced fruit is then sieved for a wonderfully smooth end product. With such little processing, the puree retains the natural colour, flavour and nutritional value of the apricot.

Is apricot puree healthy?
Apricots are a fabulous source of vitamins and minerals, rich in antioxidants like potassium and high in vitamins A, C and E. Thanks to minimal processing, much of this nutritional value is retained in our apricot purees.
There is, however, significantly less fibre in apricot puree than in the raw fruit. That’s largely because the skin of the apricot (where much of the fibre is stored) is discarded during processing to ensure a smooth product.
What does the ‘Brix’ level of apricot puree mean?
Apricot puree is available from Kiril Mischeff at between 11° and 13° Brix. This is a measure of the puree’s sugar content, with a higher number reflecting a higher sugar content and therefore sweeter taste.
The number effectively represents the number of grams of sugar that’s contained within 100g of product but bear in mind this sugar is often the naturally occurring sucrose in the fruit – not sugar that’s been added to the puree later on.
What is organic apricot puree?
Kiril Mischeff can supply apricot puree for use in products with organic certification. Our organic apricot puree is produced using fruit that’s been cultivated without man-made fertilisers, in accordance with approved certification bodies for organic food.
