Desiccated coconut is made by grating pure, white coconut flesh into tiny pieces or grains, and then drying it out in hot air at about 55°c. Therefore, it retains some of the coconut’s moisture and texture but is dry to the touch.

While desiccated coconut is high in fat and calories, it’s also a rich source of nutrients including manganese, selenium and copper – which aren’t easy to come by in other foods!

Many people don’t know this, but in its purest form, it also actually contains more fibre than it does sugar, with 6g of fibre in every 100g compared to 5g of sugar.
