Desiccated Coconut

What is desiccated coconut?

Desiccated coconut is pure coconut flesh, grated into tiny pieces or grains. It’s ideal as a cooking ingredient to sweeten and thicken sauces, or as a topping for cakes, desserts and other baked goods.

How is desiccated coconut made?

First, the flesh of the coconut must be finely grated. Then, the grated coconut is dried with hot air to reduce the moisture content.

Desiccated coconut only retains around 3% of its moisture, so it’s dry to the touch but retains a little of its chew.

The desiccated coconut can also be sweetened at this point – though most desiccated coconut is supplied with nothing added to it at all (other than sometimes a preserving agent to ensure longer shelf life).

Does desiccated coconut have any nutritional benefits?

While desiccated coconut is high in fat and calories, it’s also a rich source of nutrients including manganese and copper – which aren’t easy to come by in other foods.

In its purest form, it also actually contains more fibre than it does sugar, with 6g of fibre in every 100g compared to 5g of natural sugars.
