IQF stands for ‘Individually Quick Frozen’ and is a method of freezing fruits and vegetables at very low temperatures. This preserves their nutrients, taste and colour for an extended shelf life. IQF gooseberries are generally harvested from the field, then washed and dried before being frozen. The individual berries are then put onto a conveyor belt, which is cooled using liquid nitrogen until they reach the desired temperature. This process helps the gooseberries retain their rich source of dietary fibre and antioxidants. They also contain vitamin C, iron, calcium and magnesium.
IQF gooseberries should be kept in an airtight container in the freezer at all times. It is important to keep them away from other foods as they can easily absorb their flavours and smells. The gooseberries can be used for baking, and are also perfect for making jams, jellies and sauces. The gooseberries will typically last for up to one year in the freezer if kept at a constant temperature. They can be thawed before use and the best way to do this is by placing them in a colander and running lukewarm water over them.
